Why honey can look different from jar to jar
The floral source influences the colour, aroma and flavour of honey. A pale jar is not automatically better than a dark jar, and a stronger flavour is not automatically higher quality. The right choice is the one that suits how you plan to use it.
Crystallisation is also a normal possible texture change. Different sugar balances and storage conditions influence how quickly crystals form. A crystallised jar has not automatically spoiled; it may simply be showing the natural behaviour of its particular honey.
